RECIPE: Spinach and Feta Turkey Burgers

Spinach and Feta Turkey Burgers

Ingredients

5 ounces fresh spinach

1 tablespoon olive oil

1 egg

1 large garlic clove, minced

2 ounces feta cheese

¼ large red onion, diced

1 lb. ground turkey

Directions

Saute spinach in a pan with olive oil. Drain excess juices from spinach and let cool for about 5 minutes. Mix together all ingredients using a fork making sure egg is beaten throughout. Form into 6 to 8 patties - depending on thickness.

Preheat grill on medium to med-high. Cook for about 5 minutes and then flip and cook for 5 minutes on the second side or until the center is cooked through and is no longer pink. The USDA recommends cooking ground poultry to an internal temperature of at least 165 degrees F (Fahrenheit).

Tzatziki Sauce

Ingredients

1 cup Greek yogurt

½ - 1 tbsp. Lemon juice, to taste

2 Garlic cloves, minced

½ tbsp. Dill (I used dried and adjusted to taste)

Salt and Pepper to taste

½ tbsp. Olive Oil

½ cup seeded, partially peal and grated Cucumber

Directions

Stir together all ingredients, making sure to blend well. Taste and adjust seasoning if necessary. Refrigerate.

Notes:

- If patties are loose and not keeping shape try placing in freezer for an hour or two to help firm.

- Since the burger patties already have cheese, there is no need to add additional cheese on top.

- Spread Tzatziki Sauce on cooked patties and top with your favorite burger toppings.
